Sister’s Sausage & Cabbage Soup

This comforting winter soup is a recipe I adapted from my sister with the ingredients I had on-hand. I love it! While it is clean and simple as-is, you can boost flavors a bit by replacing some of the water for more chicken stock and by adding more heat (pinch of cayenne or red pepper flakes). This recipe will definitely stay on my list of quick go-to soups!

  • 1 small head of cabbage, chopped
  • half yellow onion, chopped
  • 2 Tbsp butter
  • 1 zucchini, chopped
  • 1 lb pork sausage, browned
  • 1/2 tsp garlic powder
  • 2 cups chicken stock
  • 6 cups water
  • pinch of red pepper flakes (optional)
  • salt and pepper to taste

Sauté cabbage and onion in butter.  Once cabbage and onions become translucent, add zucchini and garlic powder. Sauté 3 more minutes and then add the browned sausage, chicken stock and water. Salt and pepper to taste. Allow to simmer 30 minutes. Enjoy!
