Anytime Turkey Sausages

Happy Fall guys! I love all things Fall...football, the weather, the colors, the smells AND the flavors! This recipe for turkey sausage shouts fall with the dried cranberries and all the yummy spices including sage. I love them with brekkie OR chopped up on a lettuce wrap with lots of veggies and avocado. Enjoy however and whenever you like! 

Here's the line-up: 

  • 1 cup chopped spinach (sauté in splash of olive oil to reduce)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp sea salt
  • 1/2 tsp sage
  • 1/2 tsp thyme
  • 1/4 tsp cinnamon 
  • 1/4 tsp ginger
  • 1 lb organic ground turkey
  • 1/4 cup chopped fresh herbs parsley, chives, oregano (don't worry if you don't have fresh herbs, they'll still be just as tasty without)
  • 2 Tbsp chopped dried cranberries (a must for that sweet/savory zing)

Sauté spinach in a splash of olive oil. Once the spinach begins to wilt, add in all the spices and remove from heat. Once it's cooled just a bit (about 3-4 minutes), add in the ground turkey, fresh herbs and chopped dried cranberries. Mix well. Form 12-15 little patties. Pan fry in splash of coconut oil 3-4 min on each side over medium high heat. Finish with coarse sea salt. Enjoy!!
