I truly believe we encourage each other the most when we are authentically ourselves and simply show up. Nothing more, nothing less.
This is definitely one of those dishes you can morph into whatever you want! Spaghetti squash is the main star in this frittata but it doesn't have to be. It can take on whatever leftover roasted veggies house your fridge.
One more tasty treat-filled way to use mint! If you, or someone near you, has mint growing like crazy this summer, this is great recipe to put it to good use. If not, these bites are totally worth a trip to the farmer's market or grocery store.
