Mint Fudge Freezer Bites

Happy day! May we soak up every ounce of summer goodness and blessings.

Speaking of blessings, here it is...one more tasty treat-filled way to use mint! If you, or someone near you, has mint growing like crazy this summer, this is a great recipe to keep it from going to waste. If not, these bites are totally worth a trip to the farmer's market or grocery store. And just to make myself feel better about loving these little bites so much, I looked up some of the health benefits of mint. Some of my favorites topping the list include promoting digestion, relief from nausea and headaches, AND help with fatigue. The list goes on and on. Combining mint with the benefits of the superfood cacao powder, these little bites are a powerhouse of goodness! Super easy; all the ingredients are tossed into the blender. 

Here are the goods:

  • 2 dates (pits removed)
  • 1/2 cup loosely packed fresh mint leaves
  • 1/2 cup cacao powder
  • 1/2 cup almond butter
  • 1/2 cup pecans
  • 1/4 cup maple syrup
  • 1/8 tsp sea salt

Toss all ingredients into the blender. Purée on high until smooth and well blended. Scrape down sides as needed. May sure you mix long enough before you scrape sides so you won't open blender to powdery mess like me (see below). Once well puréed, spread into a rectangle 1/3 inch thick on parchment paper. Pop in freezer to set. Give it at least 30 minutes to an hour to set before cutting into small squares. Store in freezer. Enjoy!!
