Wonder Paleo Bread
I say wonder because it is so full of flavor and the texture is incredible! It's grain-free, dairy-free, egg-free, and coconut-free. I look forward to toasting it to the extreme (some say burning it) almost every morning! While this bread is perfect for making a sandwich, it is truly over-the-top toasted and topped with a light schmear of ghee and sprinkling of coarse sea salt. Is it just me or isn't there something magical about the smell of toasted bread? Pure delight! This bread is a blessing any way you slice it! Ha! I'm all grins...
It may seem like a lengthy list of ingredients, but the blender does all the work. Yay! Totally worth it! So here goes...
Preheat oven to 350 degrees.
3/4 cup sunflower seeds
1/4 cup plus 2 Tbsp sesame seeds (plus a bit more for sprinkling on top before baking)
3 Tbsp Chai seeds
1.5 cups almond flour
3/4 cup arrowroot flour
1.5 tsp baking soda
3/4 tsp sea salt
3/4 cup almond milk
1/4 cup plus 2 Tbsp avocado oil
3 Tbsp honey
1 Tbsp apple cider vinegar
Pulse the first 3 ingredients in a high powdered blender (I use my Vitamix) until it takes on a nut butter texture. Add the remaining dry ingredients. Pulse to mix; then add all wet ingredients. Blend until well combined. Scrape down sides as needed. Pour into 8x4 loaf pan sprayed with olive oil and lined with parchment paper. Sprinkle top with sesame seeds and sunflower seeds. Bake at 350 for 1 hour 15 minutes. Remove from oven. Remove from pan and let cool before slicing. Once slices are completely cool, you can store in the freezer and take out as needed. Enjoy!
